Most of these were already answered above, but I'll still contribute lol.

1 - I always say if food is about to expire, take everything else out, leaving only what's about to spoil in the cellar. This forces the game to use only that instead of a mix. When food hits "0 days until spoil" I would just sell it tbh, unless you actually are that desperate as it will turn to mush overnight.

2 - Yes. You can also use smoked or dried products in your cooking as well, so if you're a little short on Sunday, you can grab things already in the cellar and try making some meals.

2A - Yes. The number in parentheses is the base and the main number in front of it is what you'd get by eating it. Let's say you have an herbivore product with a base food value of 6. As an herbivore you'd get more so it would be something like 9 (6). As a carnivore you'd get less from eating herbivore products so it would be like 3 (6). I haven't played as the bear / omnivore but I assume it will be 6 (6).

3 - From what I can tell, 1 haygrass = 1 normal kibble in terms of feeding critters. They need to eat something every day, ideally grass, but if not they go for a kibble. The fattening kibble, when eaten obviously, increases their weight. When you're like me and finally are past getting sad about butchering, you could just buy/make chonker chow. The description does say "turn them into chonkers" so I don't know if you can go past the max weight or if the animal can actually transform into a chubby from borderlands 2. If you want them to eat a chonker (or more importantly medical) kibble, I suggest locking the door overnight and then making sure they ate the right one before opening the door again (this is assuming that you're smart and have them fenced in with plenty of grass growing. p.s. you don't need to water haygrass either).

4 - Also mentioned above, but all the sapphires/rubies/emeralds, etc, you get from mining just sell. Technically some of them can be used for decoration items in your home, but a pretty house only you will see is literally the least of your problems. When the game progresses and marriage is a thing, sure, a big pretty house will be nice, but that's going to be a year 2 thing, just sell all the gemstones and you'll never be poor.
