I can't play Stardew Valley and seriously enjoy it.

I think the only unenjoyable part of the game for me are the quests. the extremely limited time, the nature of the villager schedules preventing easy delivery of items, and the requirement that the materials be FRESHLY COLLECTED during the quest (meaning you can't just run home and retrieve the required items that you've already stockpiled) just make them so unpleasant/unfun to complete.

The worst is when you do actually manage to fulfill the request before the villager retires for the evening, but didn't have enough time to run over to deliver before the villager enters a locked building. Or, you DO catch the villager, but can't make it home before 2am and the losses from passing out outweigh the quest rewards.

The rest of the game, provided you don't try to min/max profits, is very fun and enjoyable. It's important to remember the whole roleplay of the game is that your farmer wanted to quit the rat race and go live in a sleepy town on his Grandfather's paid-off house so he can do what HE WANTS every day, WHEN he wants, and not have to feel rushed.

Playing the game as efficiently as possible to maximize crop yields and profits somewhat ruins the flavor of the game, because there are a lot of crops that aren't "the best" crops to grow, but are still interesting and have a lot of unique steer to the game. (sure, you can BUY the crops you want to grow,at exhorbitant prices from Pierre, but trying to raise the mish-mash of seeds you find for free during the seasons they can grow and collect seeds during the seasons they cannot is more fun and helps pace the game (since you can finish watering what few plants you have early in the day, you're free the rest of the day to pursue socializing, mining, fishing, foraging, or more.)

I also as a rule try to have as little as possible to do with Joja-Mart, your former employer; the premise of the game is that it's a greedy corporation that has to try and exploit every human and natural resource while giving nothing back to the community, and that it's an unpleasant place to work (being an office drone your whole life to barely make rent is the nightmare most of us live IRL.)

To do business with them, buy seeds/supplies from them, or to help them acquire anything in Stardew Valley in any way just seems like a slap in the face to Grandpa, the Mayor, and the villagers as a whole. I know JojaMart's presence isn't ALL terrible because the building helps act as a bulwark against a natural disaster for the isolated town (a well-built, well stocked warehouse that could house and protect villagers in an emergency) provides some basic services/economic stimulation to the town, and provides employment for some such as Sam and Shane, but it just seems like the main antagonist of the game from my perspective.
