Hmm. I'd want to see a screenshot or video for a better understanding, but I would expect that the zombies simply prefer to beat on the base of your pyramid, rather than burrow up into it. Also, this sort of design sounds challenging from a structural integrity perspective, especially if you add that roof.

Basically, your structure has to be anchored to the ground somewhere to not fall down. And your support pillars (whether that's the tip of an upside-down pyramid, or whatever form they take) are often where zombies can get at it, if they can't get to you directly. It's not out of the question that you've found an exploit, but the design is for nowhere to be perfectly safe. Are you checking for damaged blocks after horde night?
