Scribblenauts Unlimited | All of the achievements are earned for beating the game/getting everything (which is really easy, though the object shards may take a while).
To the Moon | Beat the game.
Shadow Warrior: For "kill x enemies with x" things you have to grind a little bit, like doing 2 or 3 playtroughs, though I need to finish this 100%. Too lazy for the last one I need to complete.
The Swapper Only 10 and its all abut finding secrets.. not really hard to do even that can take some time to find them
Trine 1-2: Both of them are very charming and beautiful games which is fairly easy to 100% if you give it some time.
Evoland: Short game with a few achievements that are pretty easly to get. Completed it all in about 7 hours. Definitly worth the time!
Binding of Isaac: If you're up for a real challange I can recommend you this one. Will take you many hours to get good at and even more to complete the whole thing. Insanely fun and worth every hour I played.. And I played a lot :p

Larry is a point and click adventure, and the others are basically visual novels. You can probably get a good number of achievements yourself and then use a guide for the rest.
Dysfunctional Systems is a visual novel that doesn't have very many achievements, and it's on sale now. I have the game but haven't gotten around to playing it yet.
The list misses "Deathspank", which allows you to get all achievements on a single playthrough, and it's not a difficult game either. It's actually the only 100% I have so far :-)
Quick Indie Games
Brothers - A Tale of Two Sons:
A very nice little game, only takes about 3 hours to beat. The achievements can be a little tricky in the sense they aren't always right under your nose, but the little achievement pictures and descriptions can give you a little idea what to look out for.
Papo & Yo:
Kind of in the same vein as Brothers. Short game, puzzles, achievements can be tricky to find but ultimately pretty easy. One requires you to find collectibles though.
Retail Games
Skyrim:
There aren't very many difficult achievements in this one, just be prepared to play anywhere between 50-100 hours to do and see everything needed... with a guide at least. The game itself is easy, especially if you play on easier difficulties, and most of the achievements are just completing quests (either side quests or main questlines) and just doing what the achievements tell you.
Sleeping Dogs:
Nothing in this game is particularly difficult... so completing the main story, side missions, races, etc... are all more or less just taking the time to do them then exerting any actual effort. All collectibles are visible on the map as you "unlock" that functionality by playing. Easy-ness aside, it's a pretty fun game.
Portal 2:
Really fun game, the puzzles aren't terribly difficult and many of the achievements are just fun little hidden odds and ends to find. If you don't like multiplayer, the co-op achievements may be a turn off. The toughest may be Professor Portal, which requires you to beat the coop levels and then find someone who has never played the game co-op before to go through the tutorial with. Who hasn't played Portal 2 at this point? As cheap as the game is on sale though, just spend a few bucks and buy it for a friend when you're ready to do it. ;-]
Costume Quest is a fun game well worth a play :) played it on PSN though so no steam achievements
