What is the difference between the two types of games?

Well, it doesn't.
Traditionally it's a top down dungeon crawler. One of the best examples of a "real" rogue-like is

There are also FPS like Tower of Guns or Ziggurat.

Rogue is a game.
Rogue-like is a genre of games that share characteristics with Rogue. Namely perma-death and procedural generated environments. There are more, like turn based play, having to find out the effects of e.g. potions or scrolls, and quite emergent gameplay (e.g. buying at a shop, stealing an item or fighting the shopkeeper) but they are far less applicated today.

There are also rogue-lites where each run affects a meta-progression.

The genre is called "Roguelike", predictably, because it encompasses the games that are "like Rogue".

I've played a lot of Nethack back in the day (which is a rather obvious descendant of Rogue), but I'm no fan of roguelikes anymore. It was another time, maybe even another world.
Btw, I never beat Nethack. I made it to the celestial realm (or whatever it was called in the game; I don't remember...) a handful of times, but always failed there.

A lot of games try to soften up the "roguelike" a bit, by creating "roguelite" games -- games where you keep some sort of progress between runs.
