I really enjoy playing them and one of my favourites is

You can browse them here for what you like /

I'll check out the threads though.
But the answer to your question about graphics is that P&C is a pretty niche genre these days, so tend to be built by small studios or indie devs. Having said that not all of them go down the pixel graphics adventure game creator route:
Asylum
3 minutes to midnight
Slender Threads
Black Mirror remake
Season of the Warlock
Crowns and Pawns
Syberia - especially the latest one
Alfred Hitchcock Vertigo
Sherlock Holmes titles
Are all upcoming or already released that have good graphics, but none really match your game play criteria as they are more about puzzles and story.
Kathy Rain is a decent choice - visuals are a bit dated but it's a good detective title and in the sale too

If you want "gas station, where you eat, interact with people, basically good, old, normal stuff.."
try this - great game but not p&c

So, removing those, I'd recommend you try either some Japanese, slice of life visual novels or this - which basically matches everything you wanted:

Also, the best place to ask is over at https://adventuregamers.com/ - check out the Aggy Award winners for ideas.
Edit: Side note, not all Japanese visual novels are just excuses for ecchi fan service; games like the excellent Hotel Dusk have none of that. Unfortunately, the prominence of ecchi titles on the Steam Store page rankings has given people "notions" about a very varied genre and held back releases of other titles in the west.
The graphics seems great, not absolutely sure about the story, but it sounds interesting.

I havent played B3 and Stanley Parable, but I have B1 and B2 - pretty interesting games, also unique by any means. Stanley is on my list ;-). Regarding other games... difficult to say what u understand by good graphics. There are plenty of really cute adventure games.
Not a very long game, but point and click, and pretty realistic
