Blossom Tales is kinda like the old SNES and GB (GBA) zeldas
Ocean's Heart is made on a A Link to the Past Zelda Fan engine (solarus engine)

I once saw a ZaLttP look-a-like game, with a different (nerdy) main character, but I forgot to follow it.

Which Zelda the 3D, or 2D?

I don't think the 3D zeldas are zelda-like.
I mean, its similar to metroid-prime not being a metroidvania.
or how kingdom hearts melody of memory isn't kingdom hearts-like.

heck, 3D zelda is just more like an average ARPG, much like Trials of Mana, Tales of~ and Kingdom Hearts.

Zelda-Like constitudes, in my opinion, is just the very specific elements used in the classic style.
View from above (fixed cam, cutscenes maybe an exception), scrolling screen zones, dungeons with puzzles of moving blocks and switches, chests here and there, a map screen, blowing up a wall to find a hidden room, wacking enemies with a blunt weapon or sword that has slightly more reach than the enemy's weaon, using directional pad based movement despite being able to move in every direction, not just to move but to fight, holes in the floor warp you back to where you last entered the current zone, or just besides the hole, stuff like that.

So Zelda-Like Zelda games are, Zelda, aLttP, OoA, OoS, FS, FSA, MC, LA, PH, ST, aLBW

Not-zelda-like games in the Zelda series are: Z2:AoL, OoT, MM, tWW, TP, TFH, BotW

That can mean a lot of things, if he doesn't elaborate on what he means exactly.

I assume he's searching for a story where there is a princess in a castle; a story about a common boy that meets girl of nobility, and is send on a quest to safe the kingdom by her. Let's see...

Not really if you're thinking about builder quest 1 & 2, otherwise they're not if you haven't played dragon quest series before.
