I've picked up from Humble Bundle's subscription (Humble Choice) Generation Zero this month and it surprised me. It's not got the block-style building that 7 days to die has, but it's similar to DayZ albeit no PvP that I can determine. So if you can get it cheap, I think it's worth a look.
As for 7 Days to Die I'd strongly suggest you stick with it. I know the vultures can be annoying but the thing you MUST remember are that when you start out you're at your weakest so you prepare to die A LOT. If this is a pain for you, set your inventory to not be lost every time you die. There's TONS of options there to alter your game, so there's no need to get dfrustrated at all.
Also, you get to learn that there's hidden rhyme and reason for things in the game. For example, vultures are only really a problem in certain biomes (like deserts) and horde nights. You quickly start realising how to cope with these things and before long they're just a mild annoyance at worst. You'll be missing out on the cool electrics and sentry guns and stuff if you don't persist.
There's a HUGE amount of fun to be had creating convoluted traps for zombies on horde night and forcing them to go certain routes through these traps.
I'd also echo that the Forest is good, in that it's crafting and stuff is pretty damned good, as is the survival. I hated the combat in it though, and if you find the vultures annoying in 7DTD you'll definitely get irritated with the enemies in this as I feel they're annoying as hell. You can play on peaceful mode but that removes most of the fun.
It involves going to the Epic store though. Fornite, but not the Battle Royale free version - the Save the World version.
I've had tons of fun with that, as I can;t stand Battle Royale stuff.
It's very much a case of of being warped into an area/town, smashing things up to earn resources and weapons and traps (as well as looting hidden chests and the like). You need to use those resources to build traps and battlements a bit like 7DTD, and it's utterly brilliant.
It's obviously a bit grindy but there's HOURS of play in there and it's pretty deep and engaging. And perhaps most importantly, once you've bought this version of the game (technically) you don't need to spend another penny ever.
Left 4 Dead 1 and 2 - again shooter more than survival.
How to Survive. Top down zombie survival game. There's a sequel too. Cheap in sales.
Dead Island. Like a lot of people I found the second "level" too hard but graphically it's great.
Unturned. Free to Play. Pixel graphics. Mainly P v P with zombies.

Except Zombie Army Trilogy is very much a single player game too. Just pointing out you do not need at all to co-op it.

Technically yes.
But even on the easiest difficulty there are several stages throughout the game that are very tough if you're solo and don't know what you're doing.
Plus alone - you take too much damage - game over, back to last checkpoint. Multiplayer your team mate(s) can save you.

I'm older and disabled, and while I play games a lot, my lack of abilities have made me resolutely average (it's mostly why I was pretty good at reviewing games, as i was atypical). I had no problem with it at all on Xbox.
So unless it is MARKEDLY different on PC, then you might be doing something wrong.
As long as you keep remembering to find space and move around, you'll be fine. Avoid that and I can see how what you expressed can happen.
Two I remember.
Spoilers.
Church. End of first level, first part. It's so easy to get trapped by Elites and huge numbers of undead in the church. The suicide zombies are also a major pain.
Final episode, Second chapter. So many enemy. Difficult to stay alive long enough to kill Occult General.
I think it's a case of "suck it and see".

Ah I get you now. Yeah, that's a case of move around.
I admit when I first played the game, being familiar with the Sniper series but not this spinoff, theidea of moving around was something that I didn't anticipate. So I did get caught in the church too. Until I realised that you can actually just stay in the church and use the stars to run them around and keep your distance. Once I realised that it wasn't difficult at all.
And that really set me up for the rest of the game, as I immediately started both keeping an eye on a way spare space to run to when things got close, and slowly moving to shepherd the zombies around.
I've no idea whther that's by design or not, but the point is it wasn't that difficult at all.
So maybe you're overlooking that is all I can say. I will also say I don't play on hard difficulties (I can't remember if there's the option on this game - it's been a while since I last touched it) so your mileage may vary,. but in any case the tactics of moving into tpsace and shepherding greatly improve things.
My default is "marksman" - middle difficulty - but I've played Sniper Elite with others.
As I said "play and see".
