Beginner games
I was wondering if anyone had any good suggestions for beginner games. My wife has just recently started playing games on PC, and I need help finding her some open world beginner games. She dove into Skyrim, but gets jumbled up with all the controls at once. Just need help finding open world games with an easy learning curve and simple controls.

I like rpgs myself. Perhaps the Avernum games might suit. They are massive, huge world to explore. Avernum 4, 5 and 6 are old school graphics. From memory (and it has been a while) you can do most things with a click of the mouse. Avernum 1 and 2 have been remastered (not played those yet) and all games are stand alone, no need to play them in order.

Well, it's not like Skyrim, but it is a great game and easy to learn how to play...

7 Days to Die

Building, crafting, zombie survival and exploration is the main focus in that game. It's pretty fun, and you and her can even play together. Check out the vids on Youtube of husband/wife or boyfriend/girlfriend playing together and having a blast.

I'm with Riedy, I agree kids games are best to start. I suggest Grow Up/Grow Home they are fairly simple games.

Try free MMO's with tab targetting like Everquest 2.

I do not think of open world games to be a good starting point for gaming beginners. A tight narrative with clearly formulated and designed tasks are way better...

I started gaming with smb1 and mega man. Maybe you should start out with 1980's games.
EDIT: oops, I missed the request for open-world games.

Here are some games with relatively simple user interfaces and/or controls:

(I particularly recommend this. This game has a stunning amount of depth)

(this game kinda overstays its welcome with its length though)

Honorable mention to this, which is basically just a platformer, but may be charming enough to capture the attention of a casual player, and also has co-op:

Also, I can suggest a couple visual novels, if she just prefers reading. But they're not really "games" in the usual sense so I'll hold off on that.

I think survival, rpg, visual novels, point & click and plaformer games are the easiest games to play if you're just starting out - games that don't have a lot of controls and/or combinations:
