They're classy well-made casual games which give you some challenge at later levels.
Total War series allows you to pause in battle so may be okay. Try Rome TW (not Rome TW 2) - should only be a couple of dollars in next sale.
I might also try out Baldur's Gate series - superb adventure and again you can pause to give instructions to youir characters.

I would get in touch with Able Gamers. They are a great organization that helps disabled gamers with not only game choices but also with helping them get access to various access ability tools.
While not a Steam game most people wouldn't think of recommeding Bayonetta2. On the surface a spectacle shooter fighter seems like one of the most unfriendly game types for someone with a disability. Yet it has so many accessibility options that almost anyone can play it. Able Gamers gave it an award for that
Reach out to them and they'll probably surprise you with what your options are
I haven't played it much yet (at all), but is Oxygen Not Included a viable option? I know it's largely mouse controlled and I think you can still do most things in game while the simulation is "paused". it could end up being too tedious, but it's at least worth considering.

for the same reasons (mouse controlled and pauseable simulation), you should at least look into prison architect, which I have played significantly more. I highly recommend it to not only people with disabilities, but anyone that likes the idea of building and managing a simulated prison.

If you really like RPGs or JRPGs, you also might be interested in the RPG Maker community. I'm not gonna lie, people make a lot of bad ones...but there's also a lot of great ones and a lot which are hacky but funny/fun as well.

I know, JRPGs are usually the realm of consoles, but this is native to PC and was designed so as to natively accommodate keyboard, mouse, keyboard+mouse, and gamepad controls. (It's also still actively maintained and improved by the publisher, despite being at least a few years old.)
It's also very highly-regarded, though be warned that it is a slow burn, known for the intricacy of its setting. Once it sets everything up, you get to see the pieces coming together and the result is very powerful.
