When Nintendo Configuration Support is enabled, you are telling Steam to take the Pro controller input and emulate (in most cases) an Xbox 360 controller to the game, the controller most likely to be supported by games, especially Windows side.
I'm still unsure if Steam's Xbox gamepad emulation works on M1 Macs but perform this step:
System Preferences > Security & Privacy > Accessibility > Enable Steam
Then enable Nintendo Configuration Support and test if things are working.
It will require the game have gamepad support.
If you've picked a game that uses the Steam Input standard, I believe the emulation will function correctly,
I don't know if the Steam overlay also has to be active for the gamepad emulation to function, on Windows it's necessary because that's how the emulation works there, but on Mac it's via a driver. Anyway, pressing the Home button when in-game should open the overlay if it's enabled (which it most likely is).
The thing that should work is keyboard/mouse emulation but first test how things go with gamepad emulation.

So does the game show Xbox prompts/say you're using an Xbox controller?
If you're able to try with the controller wired, I would appreciate it (in your own time, no rush). Just want to get a grasp on how things are working

I wasn't thinking before, gonna drop the permission step in the thread where the guys weren't having success with Steam's gamepad support... There'll be a pool of experiences to glean.😎👌
I definitely see what you mean now with the xbox emulation control set up. Those notifications did not pop up the first time but they do when I plug in the controller now. Things worked perfectly the first time but when the xbox emulation notification came up during start up it causes some issues with games and then on the other end when I only have Nintendo control support and play FPS games the gyro controls are not very helpful and I cannot turn them off.
To disable the gyro you go to the game's controller config and blank the gyro control:
1. Right-click the game in Steam Library > Manage > Controller layout
2. Select the gyro: https://steamcommunity.com/sharedfiles/filedetails/?id=2838703959&fileuploadsuccess=1
3. Set Style of Input to None > Back > Done
