Elder Scrolls Online (ESO) and Catalina
Okay, for everyone still trying to get this working.

1.) The Launcher

If the launcher doesn't work because it didn't update before you updated to Catalina, you need to reinstall the game. In good news, Steam only uninstalls what it can find and checks to see what might be there before installing so ...
1 - Right click on the game in your library and select Properties > Local Files > Browse Local Files
2 - Drag the files for the game onto your desktop.
3 - Uninstall the game.
4 - Put the files back where they were.
5 - Install the game. It will only reinstall what it needs to, not the entire game. There will still be many GB involved.

2.) The White Screen of Death

Try to fire up the game. If it works, great. If you get the white screen of death, then try hitting Cmd+M twice. If that doesn't work, then you need to fix your graphics settings, which you do from the Settings menu in the ga-... ermm ....

The problem is pretty simple: Full-screen mode is borked, which, as we all know, never, ever, ever happens in Mac games. Fortunately all your Settings from the settings menu are saved in a text file on your computer.

1 - In Documents > Elder Scrolls Online > live ope UserSettings.txt.
2 - Change the following properties to "0" :
SET PreferMaximizedWindow "0"
SET PreferExclusiveFullscreen "0"
SET FULLSCREEN_v5 "0"
3 - Save it and restart the game.

It may take a while so give it a minute or two to sort itself out, but it should open in a default windows resolution the same size as that evil white box.

DO NOT GO BACK TO FULLSCREEN! At least until they fix it. Okay, you can, but anything that changes those settings breaks it on the next launch so you'll have to set them to zeros again.

You may need to remove and add all three ESO apps in the Steam ESO folder to your accessibility settings to prevent the dreaded mouse spin. (Apple icon > Preferences > Security > Privacy > Accessibility)

The ESO forum would be best.

Another possibility:

Try that. Remember, Catalina does not support 32 bit programs.

Moving to the Mac forum.

Yep, this was culled from that, some other threads there, and much experimentation.

Sorry for posting under the wrong topic, wasn't even paying attention to whether there was a category dropdown. Consider me appropriately cowed.

In good news, ESO is a 64-bit game. The last piece of the 64-bit update was just late in coming, and boy was it a blocker.

There is still a render issue preventing launching in full screen modes tho.

Hmm, the grammar checker requires Oxford commas. My publications office would have a cow.
