Network Encryption

Hello all,

I am creating a dedicated CS GO server for a network packet analysis study. I did some research on the internet and saw that valve's official servers have encryption on their network packets, but I didn't find anything about dedicated servers. Anyone with more knowledge than that, could tell me if the dedicated servers created by us have network packet encryption? If yes, is there a way to remove it?
