Yatzhee himself coined the expression "PC gaming master race" in reference to the original Witcher's complex crafting and menu systems being unsuited to controllers. Though he later expressed regret over spreading the phrase and had some choice words for single-platform and PC-only snobs as well.
An MMO with a persistent war and a lot of crafting. You could spend the entire game never fighting and gathering/crafting for the war effort. There are a lot of things you can craft from rifles and medkits to entire railway networks with armed trains carrying ammo to the frontline to resupply your tanks and artillery.
Dwarf Fortress
I'm sure you already know about this one, but it is notoriously deep and complex. Some of the complicated projects just get absurdly complex; people have made real working computers inside the game out of pressurized water pumps and minecarts.
Space Engineers
I haven't played this one much aside from screwing around but I believe it is pretty complicated if you actually do the gathering/crafting stuff.
Terraria
Might not be what you're looking for but I think it is worth mentioning. The devs have cared about this game for a loooong time and there is so much stuff in it now.
I don't know. Learn how to save Plump Cap seeds and you're set for life.
However that game does not have mass appeal as it not only quite text based but it uses an energy system meaning you can only do so much in any given day. However on the upside it got much more generous energy cap than normal energy based games so you can just stock up energy for the week and play on weekend. There is no FOMO daily grind.

And I'm loving what they did with the boats
Foxhole - I'll give it a look as it sounds very interesting. I'm not big into PVP/Combat but that doesn't mean I can't make a weapon to kill the enemy.
Dwarf Fortress - Definitely an amazing game. Had an entire run fail because one of my dwarfs became "inspired" and then went on a rampage because we didn't have the material they wanted to craft with.
Space Engineers wasn't terrible - I spent over 600 hours playing it but meh.
Terraria - Lost way too many hours of my life playing this game repeatedly. Not quite what I'm looking for as it's less crafting and more building but still a whole lot of fun.
Vintage Story - I'll give it a shot and check it out
Dyson Sphere Program - an absolute favorite of mine as well. However I'm still looking for something more crafty and less factory
