In other media where there's constant sith vrs jedi battles i'd say like maybe 15%? but i'm not a starwars scholar so i can't really say for certain.

Well, it's a little known fact that once they become a true Jedi, they must make a choice. This is why you may have only seen a couple that had prosthetic limbs.
And because opposable thumbs are still useful regardless.
The force moves things, but from what I have seen not very delicately, and it mostly just zips stuff to the hand or levitates people into a choke hold. The force also doesn't have the finite manipulation of fingers.
First, they use light sabers to deflect blaster shots. Even if you're crushing somebody to the floor into a bloody mess like a hydraulic press they can likely get a good shot in at you. Second, when your foe is another force user, who's to say they can't just release themselves from it?
Also, Palatine didn't bother with a light saber, or at least not in Return of the Jedi. He just used force lightning.
there's still a 10% amputation rate for any given jedi. if not a hand or an ear or an antennae or what-have-you, then some other sensitive part.
this is only 5% higher than the crippling self-injury rate among regular single-edge swordsmen, or 3% highger for double-edged swords.
It's important to note that Luke's injury is essentially a result of his unresolved feelings, and according to Forceonomics that means he had a hand in it. Thus why Kenobi meditates before facing Dath Maul, an expert in Force-based swordsmanship.
