The key difference between the two methods is centered vs off-center, and what determines which is best is the size of each tortilla and how much food is inside them, proportional to the size of each.
I think the second guy looks like he has less food per square inch/cm of tortilla than the first one does (even though there's a lot more food in it overall), which means that he can scoot it all to one side and still have more tortilla left to wrap around it at the end (which makes sense, seeing as how the larger of the two burritos would need more structural integrity).
The first guy is me, because I can only find tortillas that size in the store. If I used the larger size I'd use the second method also, which is the more traditional method. (The guy in the 2nd video really knows what he's doing, whereas guy number one is just a casual foodie. Great tip though.)
Just fold the end-caps in first, and keep the contents light, dry, and relatively cohesive - which works well for me, my personal favorite burrito fillings are beans, vegetables, and cheese. If necessary, use a second tortilla on the outside.

Why are tortillas round shape and not rectangle? A rectangle will make a better cylinder, while holding more space. It seems we're still in old 14th century technology by sticking with round tortillas.
I think round tortillas would also be preferable to square ones because an 8" diameter round and an 8" square would both hold the same amount of stuff, but the round one would require less ingredients.
So when using 2 pounds (for example) of cornmeal (or wheat flour) to make tortillas, you might get one or two more of them by making them round instead of square.
Round tortillas probably also take less time to make since you're just rolling it into a ball and pounding it flat.
