when trying to get to know someone whats your favorite open ended questions to ask to start a conversation? what kinds of info do you seek?
personally i tend to ask what their hobbies and interests are and try going from there.
what questions do you feel you can gain the most knowledge about a person?

Whether or not they have strong convictions, and what those beliefs are.

That's in regards to "What kind of info do you seek/What questions do you feel you can gain the most knowledge about a person". Asking those questions directly is not something I do, but spending enough time with a person will reveal that on its own. Actions speak louder than words I've noticed.

I don't think questions are really that useful, because most people will only answer with what they think you want to hear. Better to put them in a situation that answers a question without asking.
