Why is it politically incorrect to say "happy holidays" in the USA?
So, me being a Mexican from Mexico (lol) I'm struggling to understand why is it wrong for people to wish happy holidays in the USA.

I often see people getting offended for being wished happy holidays. I suppose for a country that big there are people who have different traditions either because of their religion or lack off to say the least, so I think saying happy holidays it's pretty nice because it takes into account everyone and nobody feels left out.

I know it's not only Unitedstatians, we also have a bunch of people here who do the same but they are a tiny voice compared to the USA where even news anchors join into the offended group.

To the equatorial region and Southern hemisphere it is. The latter have seasons flipped, whilst the former doesn't really have seasons as the North and South does. ;P

If people are indeed offended by the phrase "happy holiday" then I'm not surprised

Why, would you get upset if you went to a middle eastern country and they called their holiday by a non generic name?
I've never heard of that. Here with us, it's common to wish colleagues or friends who are going on holiday a nice holiday. It's rude or awkward to forget that. It gives the impression that you begrudge the person their holiday.
Someone somewhere else grows all the plants we need
Someone somewhere else raises all the livestock
Someone somewhere else builds our homes
Someone somewhere else makes our clothing
Someone somewhere else maintains our water distribution

With nothing of actual importance left to worry about, we find strife in things that aren't important at all, like whether a complete stranger wishes us "Merry Christmas" or "Happy Holidays," or Donald Trump getting two scoops of ice cream.

Unlucky for me my job doesn’t celebrate anything. You can’t say merry christmas without getting fired (if someone reports it). Why? Because we (the company) don’t want to offend people.

Its a cultural tradition which became historically linked to Christianity, there is a concerted effort to remove religion from western culture.
