Additionally, the Cookie Autodelete addon removes cookies that aren't explicitly whitelisted. And blocking all 3rd party cookies is pretty standard practice now.
Since I switched back to this browser, I haven't had that adblock message show up on any videos so far

I don't know how to get around ads within videos though apart from using adblockers.
Also nobody use Google Chrome if you want to use adblockers in Youtube. Use another browser like Firefox etc.

I don't think it works like that once logged out.
Once page is refreshed it resets content of page if one logged out just prior to refreshing the page.
YouTube also tracks things like what IP addresses are associated with the computer's "fingerprint" (computer's serial number), what accounts are associated with computer's "fingerprint" (computer's serial number), and what accounts are associated with computer's IP addressees. This triangulation makes it difficult to hide user's activity while using YouTube whether or not one is logged in or not.
Even VPN users can't hide their computer's "fingerprint" (computer's serial number). This is why it's sometimes recommend to have a few computers, each with own internet IP address and each with different VPN provider. Each desktop PC used for different purpose, even one that has never been online or been "linked" to the other PCs.
It's difficult to have a cake and eat it too.

Edit: I forgot to add that I stopped using Chrome as well and switched to Firefox, and as an added bonus, I have been using a dummy phone instead of a smart phone tied to Google's stuff.
