Never played RDR 2, but the horse physics look pretty good. Even though Rockstar famously screwed up the physics in GTA V, they're probably the only ones who are actually putting any effort into physics in 2021.
Saints Row 3 and 4 for more polished(ish?) ragdolls.
Dying Light and Left 4 Dead, but really, all the Techland games, even the Dead Island games.
Because there are a lot of bodies that drop constantly be it theirs or your own.
Instant most realistic ragdoll physics. Might be the best/most fun though.

Does have probably the most realistic ragdoll physics though.
Came here to mention HL2. The gravity gun was all about ragdoll physics.
