As to what I subjefctively like a decent Glastonbury cheddar, or a Blackstick's Blue (stinks to heaven but it's lovely). Or a straight up proper Wensleydale.
Or even something my native native Lincolsnhire even does - the Lincolshire Poacher cave aged cheddar.
