Completly different worlds
I have over 6k hours on Ark Survival Evolved, 1400 hours on Avorion, 1200 hours on Oxygen Not Included. Those are just a few of the games which I play single player, doesn't include titles like Minecraft or Euro Truck Sim, which I also have thousands of hours in (not on Steam, or on other Steam accounts).
A good 70-80% of my Ark time has been solo, only five hours or so of Avorion has been multiplayer, and ONI doesn't even have a multiplayer option.
Replayabillity is subjective. Just because some single player games do not appeal long-term to you, doesn't mean that is the case for everyone. I think I got my money's worth from some of those titles mentioned above.
Single player games allow you to adjust game settings and add mods which can change up the way a game plays far more than any multiplayer mode, which must be strictly controlled to ensure balance, and usually gets broken by hacking anyway.
Fun is also subjective. What appeals to one person may be boring or annoying for another. This too cannot be universally measured.
multiplayer PVP games is where you dont relax and actively have to use your brain a lot more than usual

"Replayability" is something I don't need or want. There are plenty of games out there, why I should I keep playing the same one again and again?
If I play through a game multiple times, it's out of "necessity" -- usually because I want to get an alternate ending that I feel might be worth getting. Sometimes it's just out of wanting to 100% a game. It's definitely preferred if the game has an NG+, or at least allows skipping the cutscenes, so I can just race through the already-known parts as much as possible.
I might indeed have to raise the bar for prices a bit to open up some franchises I haven't played yet -- but in general, Singleplayer games are exceptionally cheap because you don't need to play them when everyone else does. You can just wait a few years -- a multiplayer game will be "dead" by then, but a singleplayer game works just the same, or even better.
