You already have The Elder Scrolls series in your sight. You could start there.
How about The Witcher 3?
Dragon Age: Origins?
Gothic series, they are old school RPG.
Look at Planescape: Torment too. It has a more linear gameplay than BG if BG seems a bit daunting. And you have the remastered version, too!
Then you have the Vampire: The Masquerade series where sometimes, the ending depends on the vampiric politics you chose.
Here are some with linear storylines that you might enjoy but doesn't have the open-world, questing exploration crafting bits:
Spec Ops: The Line
ENSLAVED: Odyssey to the West
Bayonetta (75% off right now)
just watch the trailers
Just to clarify, what follows is my subjective opinion that you don't need to agree with, but I'll still say it because that's how I feel about it:
So, I've played pretty much all single-player games worth mentioning except for PS4 exclusives and out of all games, Alien: Isolation and Red Dead Redemption 2 are games that I would recommend to absolutely anyone, not just people who don't like this kind of games, but also people who don't like games in general.
I found these games to be truly incredible experiences, immersive on a whole new level and very easy to get into.
I've finished Alien: Isolation at least 5 times and then watched my cousin play through it all day for 2 days straight which I found as fun as the first time playing it myself despite remembering literally every single thing about the game.
It's currently on a discount and I can't recommend it enough, you can always get a refund if you end up not liking it, but keep in mind that it might take some time to get into because it starts slowly and gradually introduces you to how everything works.

Too expensive for you right now, but it would be a crime not to recommend this game. Other games I would recommend would be:
-Batman Arkham series
-BioShock series
-Dishonored series
-Fallout series
-Mad Max
-L.A. Noire
-Prey
You can play this single player easily.
If you like something that makes you think

but if you like shooter type games go with Warframe
Max Payne 3
Sleeping Dogs
Yakuza 0,1
AC Origins,Odeyssey
HItman 2016, Hitman 2 , Hitman Absolution
Dark Souls 3 ( if u can handle it :P)
Seikiro (if u have mastered Dark Souls 3)
Shadow of War
Vermitide 2
Ryse: Son of Rome
-Mass Effect Trilogy (hits every checkmarck, except for crafting. And yes, It's realistic in its own way)
-Dark Souls 1, 3, and Sekiro (skip Ds2)
-Dead Space trilogy (if you miss at any time playing multiplayer, Ds3 has coop)
-The Witcher 3 (not my favorite, but to be fair, great game)
-Assassin's Creed 2 (the best of the best the franchise has to offer, imo)
And if you like indie games... Hollow Knight, Salt & Sanctuary, Ori...
Cheers!
Souls Games (1,2,3)
Dragon's Dogma
Final Fantasy Games
Resident Evil Games
