From the games I've played, I'd nominate Injustice 2. Certainly within fighting games, Netherrealms' simulated nether regions are breast in class.

I've always been a fan of water physics that bounce up and down when you enter it.

Terraria had surprisingly good water physics. It behaved surprisingly like real water, settling in low areas and draining downwards. Although you could absolutely rek yourself with it when exploring underground. Groundwater was possibly the most dangerous enemy in that game.
