Thief 2 (for me at least I couldn't get Thief 2 to work for my system, it might be different for others though), Thief: Gold and Deus Ex: Game of the Year Edition (2000).
I would also recommend No One Lives Forever and No One Lives Forever 2 but those are never going to be on Steam or GOG due to nobody knowing who owns the license.

The Far Cry games have some stealth elements to them, but for the most part it's gonna be more loud situations.

It's not first person but I would highly Recomend MGS V Phantom Pain. Even if you don't get it now, it's only $20.
