If you are to play a Souls game, I *HIGHLY* reccomend starting with Dark Souls 1.
Also, Souls games never provide the kind of freedom Skyrim has. Keep that in mind.
You can be invaded at any time, whether you like it or not.
And a lot more were clear and crisp. Both evened out in the end with performance, depending on the location. SE is the better looking if both are in a Vanilla state, though mods are the only advantage for the Original right now. That will change when SKSE64 is released.

OP, it is just a matter of what you want to play.
Skyrim is a fun game, where you can relax an focus on other aspects at times. It is long, involved with a lot of history and lore in the game that you can find if you wish to know more about the world.
Darksouls is a death game where you keep dying in order to learn and progress. You are constantly looking over your shoulder and in fear of dying, even of the smallest mistake. It is less open world then Skyrim and far more deadly.
My preference is for Skyrim as I like to enjoy my games and not be torchered by them, but there are many who also enjoy Darksouls (reguardless of what one you choose) and prefer that.
Not true. There is an off-line mode option from what I recall (that or run Steam in Offline mode). I have never been invaded.
They do have "fake" invader that are basicaly overpowered NPCs using player models and skills as a player would...at least in DS2. DS1 didn't have that and I do not have DS3 to be able to say there.
And playing in the pseudo-offline mode means no co-op partners.
Yes it did. Several times, in fact. DS3 also has AI invaders.
All of those tend to go on sale around the same time, for good prices.
From my experience, DS1 is DEFINITELY a way to start Dark Souls series. It's better than DS2, in my opinion and I cannot say anything about DS3 as I've never played it.
Just turn off AA and Vsync in the PC settings in DS1 or the DSfix won't work.
I could list so many problems with DS2 that just makes it less enjoyable.
Dark Souls 1 is easier than both DS2 and DS3 too.
Skyrim is ok though. Mods are fun for a while but when the gameplay is the same and the NPC doesn't really care how many dragons you slay or how bandits think they can still take you on late game.
The game won't penalize you if you play offline in Dark Souls 2. It'll penalize you if you keep disconnecting from invaders.
In DS3 you can turn it on automatically and on DS1 there is no anti cheat what so ever so anything goes really.
I can find nothing about such penalty in DS3 other then two minor things.

So a bit less health and miss out on some armor/weapons. Sound easy to work around and not like a penalty.
DS1/2 and 3 seems to have similar options, so you can play online and avoid fighting PCs. I think DS1 was you had to stay in hollowed form. DS 2 may have been similar and for DS3 it appears to be Embers.
