No ones mentioned bethesda games yet, you can set up interesting fights using console commands and mods.
Pretty much any sports game (what few that can still be found on pc) allows this.
- Audiosurf 1 and 2
You can watch the AI play the game (called Free Ride). Good if you're just chilling out and want a visualizer to go with your music.
- BRINK
You can set up a custom match, then join as a spectator. You can only spectate from 3rd-person, though. The game is free anyway so you can give it a try.
- Fight N Rage
There is a 1v1 battle mode where you can watch AI vs. AI. You can unlock more characters by purchasing them from the shop using credits you've earned from playing through the story.
- Fire Pro Wrestling World
You can set up AI vs. AI in the various match types, even having tournaments to crown a new champ. This has a lot of deep AI and appearance customization options for your wrestlers that I won't list here - too many! It is possible to make a Hulk Hogan, and set up the AI to make him behave very close to real life. With a lot of time and patience, you can set up some stellar wrestling promotions.
- Poker Night at the Inventory 1 and 2
If you are eliminated, you can watch the AI play the rest of the game. You can try getting yourself eliminated first by going All-In during your first turn. However, it will affect your personal overall stats if you care about that stuff. Nice to watch the first few times when all the characters are talking amongst themselves, but eventually you might get tired of hearing the same conversations and voice lines over and over.
- Robot Roller-Derby Disco Dodgeball
You can spectate bot matches (free look, chase cam, and first-person by pressing middle mouse in spectator mode), and there are several gametypes too. Can't customize the bots, though.
- Unreal Tournament GOTY (aka UT99)
You can spectate bot matches via player chase cam or free look. You can go into first-person POV and even see what a bot is thinking via console commands (tilde, then type behindview 0 for POV, and verbose for bot thought process).
You can fully customize the bots (name, appearance, favorite weapon, accuracy, alertness, willingness to camp, strafe & jump). If you ever get tired of vanilla UT, there is a huge variety of mods and custom maps you can use to enhance your game and spice things up. 5v5v5v5 sword melee team deathmatch in a city filled with zombies in low gravity? It's possible!
UT99 even has a built-in stat tracking software called ngStats to track things like kills, deaths, recent match results, etc. (not included in Steam version, but you can get it from the demo version or Google it - copy NetGamesUSA folder and drop into Unreal Tournament folder, enable 'ngStats Local Logging' in game options). See who the top bot is!
- Unreal Tournament 2004 & UT3
Both games have similar spectating options as UT99, but not as great customization and mod options. They also don't utilize ngStats, which is why I haven't spent much time on these games.
- Worms Armageddon
A July 2020 update added a feature to spectate bot matches. You can create your own AI teams and customize team name, individual worm names, difficulty, battle voices, country flag, and gravestone. No hats like in Reloaded, unfortunately, so worm teams will visually look the same.
- Worms Reloaded
You can spectate bot matches, free-for-all or teams. Team creation and customization is similar to Armageddon except your team can wear hats to distinguish themselves better, and difficulty comes with special behaviour patterns such as vengeful, stupid, reckless, etc. You can also make your own rulesets and create your own levels with a built-in, easy-to-use editor.
- Wrestling Revolution 3D
Go into Options and change Input to CPU. This allows you to play the entire game (even Wrestling Career and Booking Career) in spectator mode. You can't edit the default promotions, but you can edit the wrestlers (plenty of options for diversity) within those promotions, or even have the game create a randomized roster. The AI is pretty clunky, but that can lead to some funny moments.

I was unable to get a 3DS with streaming capabilities while they were still being produced...
I wanted to do streaming of 3DS games as a hobby & then when I'm not playing (off doing something else) I could just leave AI matches, in Super Smash Bros, running... but not with the regular CPUs... with amiibos!
amiibo fights are actually very interesting...
