Connect the "front L&R" output (jack number 2) to your Creative A250 stereo input
Connect the "Side surround" output (jack number 3) to your Speedlink Gravity 2.1 stereo input
It's not a great solution because you're not using an actual surround speaker set which will be separating out Front L/R, Side Surround L/R, and Center/Sub channels. But it should work if its correctly connected. I'm guessing you have them connected to jack 1 and 2 which jack 1 is the microphone / line in jack (not an output).
EDIT: Also make sure you've installed the latest driver for the Xonar SE, and ensure your audio output settings in Windows 11 are configured for surround output.
i switched the speaker setup in the driver to 5.1 speakers and installed 5.1 upmix function in foobar2000 audioplayer...it works.

5.1 uses 1 headphone jack for center/sub, if its not connected those will be missing
