This $500 (500 euro is close to 500 usd) build is pretty good @1080p on high settings you would get above 60fps you can also turn down the graphics to get more fps.
If portable is want your looking for them get the steam deck. It will be the better and more powerful then a $500 laptop.

A lot of these newer games are real intensive hardware requirement wise.
( looks around ) A lot of these newer software developers are amateurs. And have many, many bugs in their programming, and environment development. Causing excessive cpu/ram/gpu-vpu requirements.
You can easily upgrade the ram and the ssd, I upgraded mine to 32 gigs of ram and 2tb ssd. So far I have been playing all games on high / ultra graphics.

When I use that cooling pad the laptop gets cool / cold, so that cooling pad works great. If I am playing a game that is graphically intense I just turn the cooling pad up to the highest setting. My laptops have never ran hot with this cooling pad.

Yes, they should get the job done.
But a cheap, normal, usb stick:
I wouldn't want to run games or an OS off of that.
It would in theory work. If you install an OS on your computer by yourself. (No matter if it's Windows or some GNU/Linux distro) You already run an OS from the usb stick. But it's really slow because of that and is only done to install the OS on a much faster drive.
Same for games. Just because you COULD run them off of the usb stick. Doesn't mean that it will be fast or even usable at all.
Usb sticks are great for keeping backups of sensitive information or simply moving files to another computer without cloud sync. But they were likely never meant for something as complex as running an OS or games.

But if you have some spare time and want to try out something wacky. You could maybe give it a try and see how well it goes. ^^
The OS should DEFINITELY be on an ssd (a sata one is going to be just fine) and that's already the standard for most laptops which aren't extremely cheap.
If your goal is AAA games, you need at least GTX 1650/Ti laptop.
