So say if i went for the rtx 2070 super ultra gaming card, will that run any game on a 1080p 60GHz monitor?
Yes but so will a 1660Ti.
Like already written a RTX2070 Super is overkill for 1080p/60hz.
The card will never be used to its full potential and will be bottle-necked by the CPU long before it reaches full load.
Going for a 1660Ti or similar will give you the exact same performance at that resolution/Hz for much less money.
I recommend getting a RTX 2070 upward only if you plan to play in 1440p at least.
I wish I could tryout an RTX 2070 on a 1440p 144GHz monitor and see if i like it. Would this monitor do well ona rtx 2070 super?

There's cheaper and arguably better.

Better panel, better viewing angle, lower price. AOC tends to overshoot with their monitors imo.
Sure, and you wouldn't need to worry about upgrades for quite a while... something people forget while trying to down sell something weaker.
Get a 2070, and run it for ages, or get a better monitor and not need another GPU upgrade too.
I have a evga GTX 1070 ftw at the moment, but I was gonna go for the evga GTX 1080 TI but don't wanna purchase a second hand one since I have lost trust in second hand sellers.

But, I don't know why you'd go with a 1080p monitor in 2019.
Grab yourself a good 1440p144hz monitor, like the Dell S2716DG [www.amazon.co.uk]. ( Especially since it's like 10-15 dollars more than the one you want. And you get the same features, Gsync, higher resolution. Although, this is a TN panel, it doesn't have bad colours, I've compared it to IPS panels, and it's pretty much the same, and it's got great viewing angles. TN panels these days aren't bad.)
It depends because most games i play are ment to be capt at 60fps like fallout 4 and skyrim with mods. I used to play alot of gta 5 single player with tons of mods and i know that would do very well on a 27 inch 1440p 144Hz monitor. I dunno if i would like a 1440p monitor since i have not tried it out for myself. I'm kinda clueless what to go for at the moment since I'm currently using a gtx 1070 ftw (mid end card).
It was strange(?) at first, but you quickly adapt to it, downside is, if you look at a 1080p monitor after looking at 1440p, it makes you want to rip your eyes out, lmao.
And, the monitor has Gsync, so, 60fps isn't a problem, it will just drop the refreshrate of the monitor to 60hz (or whatever FPS you're getting) to make it smoother, and reduce latency.
But, you can always return the monitor if you don't like it.
Just a little correction though.
You can't have 'mid end', because there are no ends to a middle, are there? So it would be 'low end', 'mid range', and 'high end.'
