Do you actually not know what a fighting game is, or are you just being difficult? My understanding is that its an incredibly common, well understood genre label.
I mean I could similarly say "define action; all games require you to act". Or I could point out that basically all games could be said to be puzzles of some sort, or adventures, or require strategy. That doesn't stop these terms from having more specific meanings in the context of game genres.
It's a common genre on consoles but I can think of only two on Steam ( Street Fighter and Mortal Kombat ) DOA, Soul Cal, KoF etc are all console games so a specific genre for fighting on Steam would be a very short list.

But I get how it makes it easy for people, either way Skull Girls is coming out that isn't on that list and there's a few free to play ones I think Archeblade (never tried that) and recent announcement:

So yea, with controller support in games, with the whole steam box idea, fighting games should be a legit genre addition to their range of items.
I primarily use other websites to see what is available and then search steam, in fact steam's advance shop search is horrible, I sometimes use google to site search the store.
Skullgirls and KOF XIII are coming to Steam, has two MKs and two Street Fighters, these are the ones I know, may have more.
Anything with melee fighting, 1vs1 fighting like streetfighter, or brawler games like golden axe and streets of rage-like games. Or whenever they might think of it, games that got 4vs4 fighting like Powerstone or smash bros.
They can put them all under 1 genre for all I care, at least it makes those kind of games easier to find than they are now.
Heck, I even put Zeno Clash in the brawler category, despite being a first person action game, it does involve pretty much the same stuff as a brawler. Lots of punching and kicking.
