Choose the second option from Properties in your library. Go to steamapps folder, find appmanifest_[appid] and set it to read-only. Note that you have to do that again each the Steam client updates, but the second option will keep Steam at bay.
"Only update when launched" would be a godsend, and this is how it's supposed to work, but it doesn't. Steam still auto-updates some games no matter what.
This isn't the tech support forum, I'm just screaming into the void. You and I both know this forum isn't actually given any notice by any valve employees with a voice in Quality Assurance, but I still wanted to voice my discontent regardless.
It will not change. People literally have asked for this since day 1 of Steam.
You need to ask the developers to put in a Beta branches if anything.
The reason people can't just turn it off is because people would turn it off. Then go to the forums to complain about bugs that have already been fixed in later games.
