Decline the gift
Other than use another account, that is the only answer some of these people will give you. I agree with you. If there are games on your account that you would rather people not see then it should be an easy thing to hide. There are many a varied reason for why someone might want this feature and it doesn't hurt those that don't want it.
Next will be a request to hide all games starting with A,D,R or M that also have an odd number in them.
Enough already.
How can it be applied to games on an individual basis?
I am pretty sure they got the tools to do it all ready and it may even be possible to find a work around to do it now
The tech is there, and I think having the option to use it for specific titles would be a welcome option for certain games. I fail to see how this will harm people who do not want it.
