There's a couple of places I can recommend you start with and work from there.
AbleGamers - a decent little group that is a charity helping disabled people get access to games through getting the right equipment and support. I know the guys who run it and while it's small and they have a small community it's a good place to start for advice.
caniplaythat.com - A website setup by a person with visual impairments who got annoyed that reviews never handled what disabled people want to know. So he set up his site and did it. So if you want to know what to play they'll likely cover it.
Forgive me also if I'm teaching you to suck eggs, but I take it you've heard of or tried accessible controllers of various sorts? Again, AbleGamers might be able to help you there.
As I'm sure you're aware, there's a been rise in games that are "like X, but with automatic battles". Hero's Hour, for example, is like Heroes of Might & Magic, but it has auto battles. However, it has pixel art, so I'm not sure it'd be up your alley. For what it's worth, though:

Traditional strategy games sometimes have an "all AI" mode or mods where you can watch the computer players battle each other. This seems to be the closest to what you're asking for. For example, you could also try this mod for Civilization 6:

I know you said voice stuff isn't likely to work, but if you could use some kind of assistive technology like that, text-based games likely be a great choice. Games like Sir Brante and Shrouded Isle, which you already own, would hopefully work well with that. They're basically just "choose your own adventure" style games. No need for fast reflexes, hand-eye coordination, or anything like that. Plus, they're not real-time, so you can try a few times to get your voice controls or other assistive technology to work.
It's more a thumb/finger mouse controller, i bet CF also can see the idea behind it, and we are still back at each person funtions with them.
And open up for alot of point and click games. / turnbase games ( where speed mouse move action is not issue. )
