By trying to trade outside of the Steam Trade system, you forfeited all the protections afforded to you by the system. All you can do is report the profiles for scamming and learn to be smarter in the future.

One of those explicitly says:
The general rule to prevent scams is only trade for what you can fit in the trade window, doing anything else (i.e. using a middleman, trading for money) is at your own risk.
Regardless of the "proof" you were asked, during the trade, if this was a gift. Obviously you said yes, so that is what it is considered to be. This is why you shouldn't trade out-side the trade system.
