Most games will indeed earn achievments offline and simply update your online stats when you next connect.
There are some weird examples of games that handle achievements a bit different, so it can vary.
For example, The Binding of Isaac unlocked a load of achievements for me next time I ran the game from a previous play when I was offline. It didn't unlock them at all while offline.
But generally yes, they will simply update any online data when you next get online. You shouldn't need to earn them again.
