Rollback a game version
Say a game updates and you cant stop it because steam doesnt let you because it always knows if theres been a update, and to launch you HAVE to update without a choice even tho you know you dont want this update.

Is there a way to roll back to a previous version after a update, OR a way to stop a game from updating or forcing a update in order to launch.

(Ive tried Betas tab in properties, the game removed a version)

Dont do it updates are important and are provided / pushed out by the developers of the game. These updates are either patches to keep the game's integrety or add new content.
Check in your library Home tab Whats new. Check the news for that game.
NOTHING on Steam is versioned, at least for the users. You always get the current version of something -- games, savefiles, forum posts, you name it.

You can't, however you can disable updates for a game until you launch the game

I'm going to assume you just don't know any better...

There's plenty of games where the modding community is huge and sometimes updates break popular mods. Being able to roll back to previous versions is a way people get around this. As has been said, some devs offer the ability to do so.

Not to mention some updates flat out break games so the whole idea that all updates are somehow integral to a game is flawed.

Yes.

Change over to offline mode. Then launch your game either through the desktop shortcut or through the actual executable in the install folder (you cannot launch for the steam client library itself).

Just make sure to not have started/paused the update. Because then things get a little more complicated.
As the good shiel mentioned above, there can be ways to rollback.

For example, there is/was a pinned thread or guide in the Fallout 4 forum explaining how to roll back the .exe version of the game after updates that break mods.

So make sure to check the specific game's forum for possibilities.

Not like you’re getting hacked by strangers if you don’t update your game. People have reasons they don’t want to update or go back to an old version, why not just answer the question lmao
