I do agree about Norton though. It's pretty much the worst you can get.

Hogwarts loaded normally and now lords of the fallen! I would'nt have thought it either but it made the difference.
I wonder if that setting actually did something or if the reboot in itself fixed it. Could have been a driver with a hiccup.

This is very odd. Whether it picks 'use' or 'not use', shouldn't matter. PhysX requires 256MB VRAM on a card, so for whatever reason it doesn't detect any VRAM when it tries turning it on (which I assume it is what it is doing).
The only explanation I can think of is that the driver isn't good. Something went wrong during install 'or' the BIOS of the motherboard needs an update, which is also possible.
I don't pretending 'nothing is wrong as it just works now' is a good idea. This could give more problems in the future. Try to get to the root of it despite you now capable of playing normally.
Edit:just happens that there is a new driver released today!
