However if it is say an older game it can vary: this day and age the gpus seem to be pretty well made and the drivers for them are usually stable for most games. I remember in my early PC gaming days I had a 9800GT and it was a massive pain to find the correct driver to get anything decent for tf2 just to have over 20fps because all the new drivers for the 9 series and 200 series had new drivers that could not play games (even more so older games) well at all.
That said, every game is different. Some drivers do work better for that specific game, while another driver works better for another specific game. But in a general rule of thumb is to just use the newest driver and stay with it till you have issues (usually with a newer game) then you update the driver and see if that gives you more fps. The only time you would need to aviod the new drivers is if something similar happens like with the 9 series where the new drivers where giving worse performance. Trying to find that driver that gives the best fps will boil down to you personally installing each one which is way more work than it's worth to fetch only a benefit of a couple fps or so in improvements (if it is an older game).
Also note: some games are much more well polished than others. Don't be expecting games that have a general bad rep for bad fps or games like in early access that often have bad fps dips at points to be fixed with a 'better' driver. I figure you might already know this, but worth noting just in case.
