If you are buying a game key from a non-steam authorized retailer, like the Humble Store, then what you can do is give the gift link provided by Humble to whoever is in charge of the secret santa distribution. It might be better to use emails for this.
Whoever is running the distribution of the gifts can then turn around and distribute the gift links or the game keys to everyone.
You can not do what you want to do through Steam itself.
I'd also include a warning about doing this sort of thing and potentially getting nothing in return, but it sounds like you're doing this with close friends who you have known for years. Strictly speaking, nothing prevents whoever holds all the gifts from running off with all of them.
i dont know if trade or gift history shows who sent you a gift after they changed their names again , if it does , just dont check it
edit for names just have santa 1- 100 , everyone puts that person they got into a unique category before changing the names , then change them in a way someone organizes it
that way you dont know who gifts you , you only know the person you gift something
