If there is an achievement that requires you to play a specific character in the game, Steam won't have an record of that gameplay until the game updates Steam and tells Steam that you achieved that specific achievement. Steam has no knowledge of what is happening in the game.
As far as Steam is concerned, your game is running. That's it.
Some games will show what chapter you're in, or what map you're playing, or if you're sitting in a lobby through Steam, but that's the game keeping track of what you're doing, not Steam.
They do not have access to that information, they know how long you have had the .exe running, that is all.
For the record, any issues you have with achievements not working properly or anything else you will get nowhere contacting support, as they cannot help you.
Again contact DbD but it sounds like you didn't actually use the Gorgodemon during the period in question
The developer of the game has no 'log' of when you started progress on the achievement. It also doesn't look like steam keeps track of when you started progress on the achievement
The reason is likely because then people will feel embarrassed about them taking a year to get a simple achievement or something. It feels less rewarding than just simply telling them 'well done, you did it'. They added a date anyway to create achievement/fame hunters since it creates activity and sales. (due to speedrunners, / trying to be better / etc.)

This is quite a stretch of a reply, considering I was neither looking for a refund nor was it in relation to what you are saying?
Based on the api, it does suggest it is clearly only a "increment the count by X" rather than a "1 was achieved on day x, 2 was achieved on day y, etc".
Although in the background in the database, there could be a table with the dates of the updates or an audit log showing when it all happened. There's no way for users to know and it's doubtful that support will tell them, even IF they have access to a database to find it.
