According to the game's store page, Dark Souls 3 doesn't use Steam cloud.

Unless you have a backup somewhere, then it is lost.

Dark Souls III saves are located in the %appdata% folder. If you don't have a manual backup then those files are lost unfortunately. You'll need to start again and it's worth making a backup after each session of the latest save file if you play online.

There are old tool apps that can see delete files in diffrent layers on a harddisk but then area is over-writed chance get low and are getting drop fast then same area has been used

ps.
most dont know such anymore, and almost impossible for most peple require skill and luck depend what area has new data on them.

and no i cant remember the names anymore, this was more a longtime ago such apps was used, today most see it as gone and move on.

As others have pointed out, if it ain't where you've been told it should be, it's gone!

However, for the future, to prevent this sort of thing happening again, I thoroughly recommend GameSave Manager. It's an ESSENTIAL program for anyone with more than a handful of Steam games.

It is just an easy way of collating and backing up all your saves wherever they are on your PC.

I normally run it once a week, get all the current saves and back them up either to thumbdrive or another external drive.

It makes things SO much easier. There's a few other neat utilties in there as well.

Try this, you might get lucky, and search and figure out other app names, plenty of them.

Probably a bit late to this but you can find your old save in C:/windows.old/user/%appdata%/roaming/darksoulsIII
You might have to turn on hidden files to find it

This thread was quite old before the recent post, so we're locking it to prevent confusion.
