A guest will have access to the lender's DLC, but only if the guest doesn't also own the base game. Guests may not purchase DLC for a base game they don't own. Any player may purchase, trade, earn, or otherwise acquire in-game content while playing a game, but in-game items cannot be shared between accounts. These items remain the property of the account that purchased or acquired them, whether borrowing or lending the base game.
Can all Steam games be shared with friends and family?
No, due to technical limitations, some Steam games may be unavailable for sharing. For example, titles that require an additional third-party key, account, or subscription in order to play cannot be shared between accounts.

DLC and in-game content
A borrower will have access to the lender's games and DLC, but only if the borrower does not also own the base game. If a they already own the game, they'll need to purchase the DLC themselves in order to play it. For free to play games, DLC cannot be shared since all Steam users "own" the game.
Any user may purchase, trade, earn, or otherwise acquire in-game content while playing a game, but in-game items cannot be shared between accounts. These items remain the property of the account that purchased or acquired them.
Trading cards will not be dropped while playing a shared game.
Here are my questions, spaced out:
Is this going to be an issue with every free DLC?
Or is this something to do with it being adult content?
Is there any way for my fiancé to download the free DLC and then use my version of the game? (admittedly, I sort of knew this one wouldn't work)
How do you tell which games/DLC are shareable through Steam's family sharing and which aren't before purchase?
What did you need more help with, please ? Pretty sure that if the game does not show up for the one you are sharing with, then it does not support family sharing, as far as your question as to what is or is not sharable.
DLC was covered in the FAQ and support pages, or at least I thought it was. Sorry.

The problem with this part is that it is free DLC for a paid game. If my fiancé already 'owns' the DLC but not the game... how do? You know? I don't mean to be cranky at you, I just think this is a worrying mistake in the Family Sharing system.
The game shows up and he installed it. But once in-game, it told him he had to have the free DLC. I already downloaded and installed that. When he tried to install the DLC, it said he had to own the game. But I'm sharing the game with him. So why does he have to own the game if he is supposedly already 'owns' whatever is free on here? I hope I've been clearer.
Okay? I'm just answering and clarifying at my own speed and hoping that other people will see those on refreshing or after responding. I was aware of that.
That's good to know, at least. It wouldn't be fun to be blocked from sharing adult content with other legal aged people.
And that seems to suggest there's a bit of an error on Steam's part concerning free DLC. It works for some games but not for others. It could be the adult content and I can try to ask Steam Support when I'm not exhausted. But I think this might be part of a wider issue. I wish I'd seen the linked post before I made this one.
It's good to look around for other topics that might also cover what you want to know, but you have to carefully consider when those topics were being posted and discussed.

Thank you for the suggestion, it's helped me find a usable solution. I'll mention on the game's discussion board about what has happened, just so the developers are aware.
