Although that is something you do not have to worry about with humble as their keys are obtained from the publishers.
The only thing you may find if you don't redeem the keys straight away is they may run out. I've had that happen to me a couple of times. It's not a problem though really, it just means you have to wait until they get more stock.
But 30-60 days after a bundles finishes, the bundle sites will send unused keys back to the publisher. So if you redeem a key after that, and it doesn't work, you may struggle to get a replacement.

Once redeemed, they do not expire as they were already redeemed. And the expiration date goes away.
