Ahh. Thank you.
I had interpreted the "Missing items?" message as referring to the items I was expected to receive, not the ones I had sent in the offer.
I mean it makes sense. I don't expect to have the ones I sent away.
Thank goodness at least one part of the trading system makes sense.
Where should I suggest something like the option for multiples of a given item to have a small personal inventory number on them or something like that to avoid 'item unavailable' trade cancellations?
That would be the Suggestions subforum.

Thanks, amigo!
Bookmarking that.
Let's say you have 4 Creeps and you want to trade them for something else:
If you go to your inventory, you'll see you have 4 identical copies of this particular item.
So, you find someone you want to offer a trade to. Go to your trade window and offer the FIRST Creep in your inventory to this person. Make a note of that if you really want. You can even make note of the specific item ID by going to your inventory if you REALLY want. Just right click the item, select "Copy Link Address" and the item ID os that big number string at the end. But I digress.
So, you want to offer a different creep to person #2. Go and offer them the SECOND Creep in your inventory.
Your inventory will stay in the same order. You can repeat the same to offer a third version and ensure that none of the trades will cancel each other.
Next issue: whathappens when someone offers *you* a trade? Obviously you can't control which item they offer. Well, just flip through your inventory pages in the trade window until you get to the page where the item shows up. Do not use the Search function. You will see a blank, empty spot where the item they selected was located. If this will mess up some of your trades, counter-offer and switch the item. Or you can just accept and re-send the trades that were canceled as a result, but you've already stated that is the very problem you're trying to avoid here.
By being aware of these, you can take advantage of the system and make that feature work for you. Let's use another example:
Say you have only 2 Creeps:
Now, you really like the Creep because just look at the little guy, he's so cute. You want to keep one, but also want to trade your spare for something else. You find 3 different people who all have something you want for it.
You can send a trade offer to all 3 people, offering only the first Creep in each. This way, when one accepts, the rest are instantly canceled: This ensures you still have one remaining.
Items that are functionally identical are still seperate items, and thus treated as such by the Steam Client. It *is* possible to avoid issues with offers being canceled like you describe, you just have to keep track of which of the items you are actually offering.
5 years later, still the same, suggestions are useless
