And as it keep coming up:
"Adult Only Sexual Content" does not filter out games such as the Witcher series or other games with general nudity and other sexual content. It filters out all games shown as "Adult Only."
unchecked by default eh? I've never gone in there and nobody uses my account. Hmmm....a mystery.

Adult Only Sexual Content is OFF by default and you enabled it to see that content.

1- On the top right corner click on your picture > Account details > Preferences (on the left).
2- On MATURE CONTENT FILTERING
Remove the ticks from Frequent Nudity or Sexual Content and Adult Only Sexual Content
3- Keep "Some Nudity or Sexual Content" boxes ticked.
This setup matches exactly what you mentioned you wanted. It seems to save automatically. You might need to restart steam or wait a bit so the store adapts to your preferences.
