Mature content still requires age confirmation
Apparently your birth date is required to access certain products by your local rating agency. This data is for verification purposes only and cannot be stored on our servers. We're sorry :(
Your preferences are configured to warn you about this kind of mature content.

This is the message I still have, I've tried checking and unchecking the options, it doesn't change anything, I still need to confirm.
Did I miss something ?

I get it as well its based on the ESRB, Entertainment Software Rating Board
I have added my date of birth many times sometimes it remembers it.

This has been asked many times before, but the answer is that they are legally required to.
From ESRB code of conduct:

If the audio-visual content contains material from a Mature-rated or Adults Only-rated game (or one that is anticipated to receive either rating), display an ESRB-compliant age-gate prior to access or purchase.
If the games listed in the store do not contain any of these then you wont get it.

Age is set by cookies. Last stage check (View Page) will never be set.

Q: Why do you KEEP asking my damn age throughout the store?

A: We're with you on this. Unfortunately, many rating agencies have rules that stipulate that we cannot save your age for longer than a single browsing session. It's frustrating, but know we're filling out those age gates too.

I sent my complaint to ESRB via their website....

According to the age verification on the website, anyone can lie their age, meaning it is super useless feature on the website!!! What a very stupid idea to waste adult time!!!

I am 40 years old and I lied that I am at least 100 years old. So that mean 12 years old can lie that they are over 18. See my point?

Can you please remove the age verification asking for my ID from the store that I can enjoy viewing the games without wasting 5-10 seconds every single time!

Won't happen for legal reasons, even if you can get past it with ease, they can still say there is a gate between the content and your child had to lie to see it so that is not on Valve.

That's only to avoid complaints, as now we can complain about anything. So who's fault ? The website, who asks the age before you can see the product, or the liar ? For sure a judge will blame the liar, not the webstore who can not verify.
Your child has seen something is wasn't supposed to ? Why didn't you put family settings ? What was he doing alone on the computer ? Steam is still ok with law. They wouldn't if you wasn't warned before I think.
