game delisting examples like the OG Grand Theft Auto trilogy, the older Need For Speed games, Metro 2033, Minecraft Story Mode, 2 of the older Max Payne games, and probably many more.

i wonder if there is a game that was delisted and removed from steam, and then relisted for sale again on steam, is there any case of this .... ever?

Yes, the Deadpool game was delisted due to the license expiring but got relisted when the movie came out. Was delisted again when the license expired again.

So far, as some examples already implied, "re"-listed games had their licenses expired. I don't think there's a precedent for a publisher pulling a game, which has been replaced by a "Remaster" or "Definitive" edition, only to re-list the original later.
I think Rockstar gave owners of the "Remastered" GTA Trilogy on their launcher access to the original versions...or at least they've said they will, which would be the first time this happened to my knowledge (not counting remasters, which gave access to the original versions from the get-go).

I'd say Minecraft Story Mode might be the most likely to appear again...though given that the original dev went brankrupt and that it's a licensed IP, i wouldn't get my hopes up too much. Max Payne 1+2 still are on Steam, albeit not available in many countries for some reason (here in germany, it's probably background radiation from the 2000's "killergames" moral panic).

Was delisted I think around 2013 iirc and got re-listed earlier this year.

PS: was delisted due to technical issues + low interest. Was then traded amongst collectors for thousands of dollars. Since it's re-listing it was part of at least three bundles and keys are now traded / resold for less than $5.

but there's loads of older games that have been dug out of the doldrums of developer collapse and legal imbo - Turok, Shadowman, Stubbs the Zombie (as above) and many more.

Licenses tend to be one of the main reasons for games delisting.

Yeah the same with the original Mafia, that had to have the music replaced before relisted. Was it GOG that did that?, memory is a fickle thing.
