If far as I know this game is 16:9 aspect ratio. May need to get DSFIX, and anything else to fix the game if using aspect ratio, or resolution that is not 16:9.
2. Big picture doesn't edit games resolution, normally in cases seeing game resolution change would be related to Nvidia experience, or AMD Radeon panel that has auto config game settings will mess with your game setting including game resolution, ensure if your using Nvidia experience, or AMD Radeon panel that you do to have auto config your game settings enable, as it's far better to manually set the settings yourself.
Also in the Steam settings can't remember where, but in the Steam client settings there's a box you uncheck to not have big picture start when you launch Steam.
Things you could try is verify game files, or restart PC, then test game to see if any changes.

The best way to explain is like the game is hard stuck on whatever resolution big picture mode was set to when i linked it to my phone, and after exiting steam link the resolution was stuck to how it is now.
My monitors resolution is 2560x1080
