Other comments here on Steam, have said you can purchase on Steam as gifts and when you do that with games you can either have the content directly given to someone else or stored in your inventory and if it's in your inventory then you can give it away at any time.
See this and good luck :)
How can I deliver the gift at a later date?

It is an early access game hope it all goes well as there is a lot mixed reviews.
Edited:
Just wanted to suggest to you as you are buying him a Laptop please note Laptops are notorious for heat problems when playing games. Teach your son to ventilate the rear
Also please insure the laptop meets the recomendations.

Make your son his own account now. Games can't be transferred from one account to another and he will want his own when he gets older.
Set him up an account and buy the game on it and give him access to the account for Christmas.
Buying he game on his account will also remove the 'limited' status.
Alsxo, "new" laptop doesn't mean he'll be able to run the game.

That said if you mouse over your games tab it will show that you have "Hidden (1)"
Or after the son has created the account you buy the game as a gift and set the delivery date to christmas
The trick is that when removing game from accout it is still possible to grab it back for free and any time.
This is done via Steam Support page.

- I want to permanently remove this game from my account
To OP: If setting up separate account for your son is not an option, maybe create another account just to buy the game as a gift for your real Steam account. You can delay gift delivery to a specific date as was mentioned above.
I have used it and it is working just like I wrote.
No need for extra money.
He is correct. Removing it is not permanent.
